Easy Dinner Recipes

Hey Guys,
We all need easy dinner recipes! If you're working outside the home or working full-time from home; and I don't mean just for pay. I was a stay at home mom, and I know it's a full time job. :) We need something that can be made in a snap, and better yet; let's have the kids help or get it started.

I have been testing easy dinner recipes for weeks now in an effort to begin writing an e-book with easy recipes for the regular cook; nothing that requires shopping for weird ingredients. AND, they have to be delicious! We have had some that don't "cut the mustard," so to speak, and we pushed the delete button. And as I like to say, "What's the point of eating something that doesn't taste great?!" I don't have the luxury of wasting calories on gross food. :)

Chicken Divan: Recipe from Cindy G.
1 chicken, cooked, boned & cut into chunks or strips. **You could use canned chicken to speed this part up (probably several cans, depending on their size). I used boneless, skinless chicken breast, cut up & boiled for about 10 minutes.

1 bunch fresh broccoli, cut into pieces & blanched -- this means to bring water to a boil; cook broccoli in water for 1 - 2 minutes, drain & submerge in cold ice water to stop cooking. Drain within a few minutes after broccoli is cooled.

1/2 - 1 cup sour cream
2 cups cream of celery soup -- or whatever "cream of" you have on hand
1 cup mayonnaise
1/2 tsp. curry powder (or a little more if you like the curry flavor)
1 cup grated cheese

1. Cook chicken; choose your most convenient option from above. I like to season my cooked chicken lightly with salt & pepper.
2. Blanch broccoli.
3. Combine sour cream, soup, mayonnaise, curry and cheese.
4. Layer chicken in bottom of 13 x 9 inch baking pan; top with broccoli.
5. Spread cream mixture over top.
6. Bake at 350 degrees for 30 minutes.

Enjoy! Serve with a packaged salad mix or cut-up veggies.
